Vanilla planifolia<\/i><\/figcaption><\/figure>\n

I’m not one for cream on my Christmas pudding, it just has to be custard or ice cream and so what I’m really admitting to is a love for vanilla.\u00a0Vanilla is the quietest spice at Christmas but there is so much more to vanilla than merely two scoops of ice cream.<\/p>\n

Natural vanilla\u00a0is the fruit and seeds from a tropical, climbing orchid. There are other\u00a0edible orchids\u00a0<\/a>(e.g.\u00a0Dendrobium<\/em>\u00a0flowers<\/a>\u00a0and\u00a0salep tubers<\/a>), but it is certainly the most commonly used in food preparation. \u00a0Some orchids are harvested from the wild to eat (such as\u00a0Orchis mascula<\/em>\u00a0and\u00a0<\/em>O. militaris<\/em>\u00a0for salep<\/a>), but given\u00a0the demand,\u00a0luckily\u00a0this isn’t true for vanilla. There are over 100\u00a0orchid species in the\u00a0Vanilla<\/em>\u00a0genus, but the most commonly cultivated species is\u00a0Vanilla planifolia\u00a0<\/em>(more commonly known as Madagascan or Bourbon vanilla).<\/em><\/p>\n

V. planifolia<\/em>\u00a0is native to Central and South America, and was first domesticated by the Totonac people of east Mexico, who used it exclusively until Aztec conquerors demanded vanilla as a tribute.<\/p>\n
