But it&#8217;s very often worth examining the science behind the sometimes\u00a0alarming headlines.<\/p>\n<p>Today there has been lots of attention on acrylamide (see this in <a href=\"https:\/\/www.thesun.co.uk\/living\/2679913\/chips-pizza-toast-starchy-food-linked-to-killer-cancers\/\">The Sun<\/a> and <a href=\"http:\/\/www.mirror.co.uk\/news\/uk-news\/killer-kitchen-cancer-risk-crispy-9675273\">The Mirror<\/a>), following <a href=\"https:\/\/www.food.gov.uk\/news-updates\/news\/2017\/15890\/families-urged-to-go-for-gold-to-reduce-acrylamide-consumption\">warnings\u00a0from the Food Standards Agency<\/a> (FSA) that some home-cooked food, such as over-done or burnt toast, fried chips, or well-roasted potatoes, contain more of the potentially carcinogenic chemical.<\/p>\n<figure id=\"attachment_437\" aria-describedby=\"caption-attachment-437\" style=\"width: 200px\" class=\"wp-caption alignnone\"><a href=\"https:\/\/research.reading.ac.uk\/research-blog\/wp-content\/uploads\/sites\/72\/2017\/01\/Burger-and-chips-e1485177585492.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-437\" src=\"https:\/\/research.reading.ac.uk\/research-blog\/wp-content\/uploads\/sites\/72\/2017\/01\/Burger-and-chips-e1485177585492-200x300.jpg\" alt=\"Chips cooked for longer at higher temperatures contain more acrylamide\" width=\"200\" height=\"300\" srcset=\"https:\/\/research.reading.ac.uk\/research-blog\/wp-content\/uploads\/sites\/72\/2017\/01\/Burger-and-chips-e1485177585492-200x300.jpg 200w, https:\/\/research.reading.ac.uk\/research-blog\/wp-content\/uploads\/sites\/72\/2017\/01\/Burger-and-chips-e1485177585492.jpg 512w\" sizes=\"auto, (max-width: 200px) 100vw, 200px\" \/><\/a><figcaption id=\"caption-attachment-437\" class=\"wp-caption-text\">Chips cooked for longer at higher temperatures contain more acrylamide<\/figcaption><\/figure>\n<p>The fundamental <a href=\"http:\/\/www.nature.com\/nature\/journal\/v419\/n6906\/full\/419448a.html\">research behind this story<\/a>\u00a0was spearheaded by the University of Reading back in 2002, when Professor Don Mottram <a href=\"http:\/\/www.nature.com\/nature\/journal\/v419\/n6906\/full\/419448a.html\">published a paper in Nature<\/a> showing the process by which acrylamide is created in some cooked\u00a0food.<\/p>\n<p><!--more--><\/p>\n<p>An <a href=\"http:\/\/www.nature.com\/news\/2002\/021001\/full\/news021001-1.html\">accompanying editorial in Nature News<\/a>\u00a0at the same time provided some interesting context. For example:<\/p>\n<blockquote><p>In rats and fruitflies, acrylamide causes cancerous changes, at concentrations 1,000 times higher than those found an average diet. There is no direct evidence for acrylamide having a similar impact on humans, but the International Agency for Research on Cancer nevertheless classified it as &#8220;probably carcinogenic&#8221; in 1994<span style=\"font-size: 13.3333px;\">.\u00a0<\/span><\/p>\n<p>Rats don&#8217;t eat heated food. But as humans have been doing so for thousands of years, we may be more tolerant to acrylamide, Mottram suggests. Obesity, diabetes and a lack of fruit and vegetables in Western diets are more serious health threats than acrylamide, he adds.<\/p><\/blockquote>\n<p>Reading food scientists have\u00a0been closely involved in work with the food industry and others ever since. Dr Stephen Elmore, from the Flavour Centre in the Department of Food and Nutritional Sciences, points out one visible example that you probably didn&#8217;t notice was happening before your eyes: crisps sold in Britain today are now noticeably &#8216;lighter&#8217; in colour than their equivalents a decade or so ago.<\/p>\n<p>So while many\u00a0food producers have made strides\u00a0to reduce acrylamide levels, most people don&#8217;t consider it when cooking at home. Dr Elmore added:<\/p>\n<blockquote><p>Although the potential threat of acrylamide has been reported in the news numerous times since its discovery, for some reason the UK public in general has failed to take on board this message.
