Abstract:

Red and processed meat have been identified as carcinogens by the WHO – in the same category as smoking. But what does this mean, and how strong is the evidence? Red meat is an important part of our diet and it is therefore crucial to understand hazard and risk. There are a lot of mechanistical data linking red meat consumption with cancer risk, but they also offer possible solutions to weaken this link.
